From Sydney:

Take the F3 freeway north until it ends in an 80 kph zone.  You will come to a roundabout.  Go straight through the roundabout following the signs to Maitland.  Turn left at the New England Highway towards Maitland.  Continue until you reach a major roundabout at East Maitland where you turn right.  You immediately cross the railway and turn left at the roundabout following the sign to Paterson.  Keep left at the next roundabout 1 kilometre down the road and continue to follow the signs to Paterson and then Dungog.

From Newcastle:

Cross the Hunter River at Hexham and proceed towards Raymond Terrace.  Take the Raymond Terrace exit and then turn left where signposted to Dungog.  Travel via Seaham and Clarence Town to Dungog.
